Chive crab cakes serves 4
Ingredients
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp Worcestershire sauce
- 2 tbsps minced fresh chives, plus more for garnish
- 1 cup crushed oyster crackers
- coarse salt
- 1 lb lump Dungeness, picked through
- 2 tbsps avocado oil
- lemon wedges for serving
Directions
Step 1: Combine mayonnaise, mustard, Worcestershire, chives and 1/4 tsp. salt in a medium bowl. Fold in crackersand crab until just combined. Using1/3 cup for measuring, form mixture into patties (3-inch round).
Next: Heat a large skillet over medium high. Add 1 Tbs. of avocado oil. Cook half of the patties until golden brown and crisp, about 2 minutes each side. Repeat with remaining oil and patties. Sprinkle with chives and serve with lemon wedges.
